Kitchen and Music: a unique combination at ‘Taste of Rome’ 2017. It’s a leitmotif, a continuous and delicate melody that can not escape anyone who is captured by the myriad flavors in the evocative frame of the Auditorium Parco della Musica in Rome. A ‘song’ that is created specifically for this occasion. Angelo Troiani, by ‘Il Convivio Troiani’, very famous restaurant in the ‘eternal city’, reveals  his creation for this edition. “This year we decided to devote a special recept to music, taking into account the dominant flavors of the summer that gave us his last few hours – said Troiani – but always remaining on our tradition. The dish, “spagolini alla chitarra”, made with egg white and semolina with a sauce and vegetables, is an excellent balance between protein and carbohydrates. It strikes the eye in the summer but also the frame in which we find ‘A symphony of flavors that has found a great deal in the audience.
